Paddy whack, is a strong elastic ligament in the midline of the neck, which relieves the animal of the weight of its head. It is pale yellow in colour.

Strip loin, is a cut of beef steaks from the short loin.

Shin shank,  is a cut of beef from the muscles of the fore and hind legs, namely the extensor and flexor group of muscles.

Topside, is a large, lean cut of beef, rolled and divided into two or three boneless joints.

Tender Loin, is a strip of meat that does not contain a lot of fat and is easy to cut. It is taken from the lower back of buffalo.

Forequarter, is a front section of side meat that runs from the neck to the last rib bone.
